There is an association in France called Gites de France. It is not obligatory for gite owners to join this affiliation, but usually it is a good sign if your gite owner is affiliated.

Typically gites in France are fairly compact in size andcomprise lounge, kitchen, bathroom, and bedroom.

Rentals
Rentals of gites in France are usually for a week at a time, but feel free to ask the French owner about the possibility of renting a gite for a long weekend,or even the whole summer or winter!

Pricing
The pricing of gite rental in France depends on numerous factors including location, condition, size, number of bedrooms, as well as the season. Remember that some areas of France have a winter season as well as summer, so some french gites (e.g the Alps) may be more expensive in winter!
